COCONUT CURRY SWEET POTATO SOUP

Serves  4

INGREDIENTS

  • 1/2 cup of diced red onion
  • 2 tbsp of minced garlic
  • 1 tbsp of minced ginger
  • 1 tbsp of coconut oil
  • 4 sweet potato, diced 
  • 1 cup of diced tomatoes
  • 2 cups of vegetable broth
  • 1/2 cup of coconut milk
  • 1/4 cup of red curry paste
  • 1 /4 cup of chili peanuts
  • 1/4 cup of sliced almonds
  • salt and pepper to taste
  • Garnish, fresh flowers and green onions

Directions

  1. Heat coconut oil in a large saucepan over medium heat.  Add garlic, onion, ginger and red curry paste, fry till brown and fragrant. Stir in sweet potato, tomatoes and coconut milk, cook till sweet potato softens.
  2. Add in vegetable broth and let the soup mix cook on medium high heat for another 5 minutes or so. Pour mix into a high speed blender. Blend till smooth and creamy. 
  3. Pour soup into bowls, topped with chili peanuts and almond. Garnish with flowers and green onions.  Serve hot and enjoy!
