Coconut & Cream Rolled Oats

INGREDIENTS

  • 1 cup of rolled oats
  • 2 cups of coconut milk
  • 1 tsp vanilla extract 
  • 1 tbsp maca powder
  • 1/2 tbsp coconut flakes
  • 1 tbsp coconut sugar
  • 1/4 cup sliced lemons
  • 1/4 cup blueberries
  • 1/4 cup sliced nectarine
  • 1 tbsp pumpkin seeds
  • 1 tbsp goji berries
  • 1 tbsp almonds
  • 1 tbsp walnuts
  • 1 tbsp dried cranberries 

INSTRUCTIONS

  1. In a medium saucepan, on high heat, cook rolled oats, coconut milk, vanilla extract, maca powder and coconut sugar. Bring to a boil and simmer for another 20 minutes or so, while stirring occasionally. 
  2. Pour oats mixture in two bowls. Topped with sliced lemon, nectarines, blueberries, goji berries, pumpkin seeds, almonds, walnuts, dried cranberry and coconut flakes. 
  3. Serve hot and enjoy!
